Recipe: Venison Burgers
LOCKDOWN WITH A CHEF: Venison Wild Burger
In the theme of keeping busy during the COVID-19 lockdown, Trent has shared another wonderful recipe to enjoy at home. Venison Burgers sourced from local provider, Arrowtown Butcher, topped with chilli and tomato relish on homemade sourdough and black sesame seed buns.
Relish INGREDIENTS:
- 100g sliced onions
- 200g diced tomatoes
- 1/2tsp chopped chilli
- 1/2 clove diced garlic
- 20g brown sugar
- 2tbsp red wine vinegar
METHOD:
- In a pan, sweet sliced onions until soft
- Add chilli, garlic and tomato and cook too fragrant
- Add sugar and red wine vinegar and reduce by 2/3 on medium heat – stir continuously or it will burn
- Set aside while you grill or cook the venison patties to liking
- Slightly toast your bun of choice (Trent uses homemade sourdough with black sesame seeds)
- Stack patty, relish and toppings of choice
- Enjoy!
